LOADED SWEET POTATO

Loaded potato with pulled pork and slaw! The perfect BBQ recipe as we head into that warmer weather.


Ingredients for Pork:

- 2 lbs. of pork shoulder

- Your favorite BBQ sauce

- 4 tbsp. salt

- 2 tbsp. black pepper

- 2 tbsp. garlic powder

- 2 tbsp. onion powder

- 1/2 tbsp. chili powder

- 1/2 tbsp. cayenne pepper

- 1/2 tbsp. cumin

- 2 cups broth


Ingredients for Slaw:

- 1 bag of broccoli slaw

- 1 cup mayo

- 1/2 tbsp. celery seed

- 2 tbsp. apple cider vinegar

- 1/4 cup golden raisins


Other Ingredients:

- 4 sweet potatoes


Directions for Pork:

- Mix spices together, then season the pork + place in the slow cooker.

- Add in BBQ sauce + broth, cover + cook on low for about 8 hours.

- When the pork is done cooking, remove to a finish shredding with fork.


Directions for Sweet Potatoes:

- Wash, pat dry + pierce each about 4-5 times with a fork.

- Working in batches if needed, place on microwave safe plate + cook for 5 minutes.

- If more time is needed, cook in 30 sec increments until done.


Directions for Slaw:

- In a large bowl, mix all ingredients + refrigerate until ready to serve.


Once you are all done, slice open the potatoes, add pork + finish with slaw on top!
